Herring

Herring is my favourite fish

found in seas all over the world and belonging to the herring family. It is characterised by its silvery body and mild, delicate flavour. Herring fish are important prey in the ocean food chain and play a crucial role in many marine ecosystems.

My fellow species and I have developed a special relationship with these silvery treats. Herring are not only tasty, but also highly nutritious. Their succulent, fatty pieces of meat are a real source of energy for us. Every time we go hunting for prey, we dive deep into the ocean depths in search of schools of these delicious fish.

Amidst the flowing underwater world, we hunt the herrings with skilful manoeuvring. Their silvery shoals flit around us, but we are patient and skilled enough to catch them.

Here are simple instructions for LEO's herring salad.

Ingredients:

  • 4 fillets of maties herring (pickled).
  • 1 red onion, cut into thin rings
  • 1 tart apple, peeled, cored and cut into thin strips
  • 2 tablespoons crème fraîche
  • 2 tablespoons sour cream
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Fresh sprigs of dill for decoration

Instructions:

  • Carefully rinse the matjeshering fillets and pat dry.
  • In a bowl, mix the crème fraîche, sour cream and lemon juice. Season to taste with salt and pepper.
  • Arrange the herring fillets nicely.
  • Place the onion rings and apple strips over the herring.
  • Pour the crème fraîche mixture evenly over the ingredients.
  • Garnish with fresh dill sprigs.
  • Let the dish sit on an ice floe for about 30 minutes to allow the flavors to combine.
